250g Tofu - cut into cubes, or Vegetables of your choice
1 Green Pepper -cored and cut into chunks
1 tbsp Oil
1 Spring Onion - cut into 2cm pieces
1 piece Root Ginger - peeled and chopped
4 Dried Red Chillies - deseeded and chopped finely
2 tbsp Yellow Bean Sacue
2 tbsp Rice Wine or Sherry
125g Roasted Cashew Nuts (unsalted)
A few drops Sesame Seed Oil


  1. Heat the oil in a preheated wok and add the pepper and other vegetables if you are replacing the tofu with vegetables. Fry for two minutes.
  2. Add the spring onions, ginger and chillies. Stir fry for about a minute.
  3. Add the tofu, if using, with the yellow bean sauce and rice wine. Stir fry for another minute.
  4. Lastly add the cashew nuts and sesame oil and heat through.
  5. Serve with boiled or fried rice if desired.
