8 vegetarian sausages
2 tbsp cooking oil
1 onion, sliced
2 garlic cloves, crushed
2 peppers (any colour), sliced
2 tsp smoked paprika
400g can chopped tomatoes
2 tbsp tomato purée
400ml vegetable stock
400g can mixed pulses in chilli sauce
400g can black beans, or pulses of your choice, drained
200g baby plum tomatoes
salt and freshly ground black pepper


  1. Heat 1 tbsp oil in a deep frying pan or casserole and cook the sausages, according to the instructions, then cut into chunks and set aside.
  2. Heat the remaining 1 tbsp oil and fry the onion and garlic for a few minutes until the onion is soft.
  3. Add the peppers and fry for 3-4 minutes then stir in the paprika and cook for a further 3 minutes.
  4. Add the canned tomatoes, tomato purée, stock, beans and fresh tomatoes. Season to taste, cover and simmer for 5 minutes.
  5. Add the sausages and simmer for a further 5 minutes.
  6. Delicious served with mashed potato.
